
I have something super exciting for you ladies today. I used to do 15 minute meals fairly often and lately it has been my goal to start cooking more often and learn to make delicious, quick and (mostly) dairy-free recipes. I found recipe over here and was so excited to try it out and share it with all of you. If you would like to learn more about living a healthy lifestyle, then the Guide to Healthcare Schools is a wonderful tool to find the right school to learn healthy living! My boyfriend and I cooked this yummy dish up last Sunday and it was quite the success! I would highly recommend it. There are more thorough directions over here, but I have briefly outlined what to do.







Here's what you'll need to whip this up:
1 medium sized ripe Avocado, pitted
1/2 lemon, juiced + lemon zest to garnish
2-3 garlic cloves, to taste (I only used 1 clove)
1/2 tsp kosher salt, or to taste (I just used regular old table salt)
~1/4 cup Fresh Basil, (I couldn't find this in the store, so I didn't use it)
2 tbsp extra virgin olive oil
2 servings/6 oz of your choice of pasta (I used whole grain spagetti)
Freshly ground black pepper, to taste (I didn't have this either, so I skipped it)
What to do:
Once you have your ingredients, boil water and then add your pasta. While the pasta is cooking, put the garlic, lemon juice and olive oil into your food processor. Process it until smooth and then add in the avocado, salt and basil and process again until smooth. Drain your pasta and add the sauce, mixing until totally covered. You can zest some lemon for garnish, and add pepper on top. Eat it right away :)
Et voila! Add cupcakes for dessert!
